Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon slices until crispy, about 5-7 minutes. Remove and let drain on paper towels.

Assemble the Sandwich
Cut the croissants in half. Place a slice of cheddar cheese on the bottom half, add two slices of bacon or sausage, and top with the fried egg. Close the sandwich with the top half of the croissant.

Prepare the Potatoes
Wash and dice the potatoes into small cubes, about 1-inch in size.

Season the Potatoes
In a bowl, toss the diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until well coated.

Cook the Potatoes
Spread the seasoned potatoes on a baking sheet in a single layer. Bake in a preheated oven at 425°F (220°C) for 25-30 minutes, or until crispy and golden brown, stirring halfway through.

Once cooked, remove from the oven and garnish with fresh parsley before serving.
