Prepare the Breading
In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and paprika. Mix well to combine.

Coat the Fish
Dip each cod fillet into the wet mixture, allowing any excess to drip off, then dredge in the dry breading mixture until fully coated. Set aside on a plate.
Frying

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Carefully place the coated cod fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assembly

Prepare the Hoagies
Split each hoagie roll lengthwise without cutting all the way through.

Assemble the Po' Boys
Spread a generous amount of tartar sauce inside each hoagie roll. Place a fried cod fillet on top, followed by shredded lettuce and dill pickles.

Close the hoagie rolls and serve immediately while hot and crispy.
