Prepare Burrito Filling

Cook the Bacon
In a large skillet over medium heat, cook the applewood smoked bacon until crispy, about 5-7 minutes. Remove from skillet and let drain on paper towels. Once cooled, crumble into small pieces.

Make Chorizo Gravy

Cook Chorizo
In a separate skillet, cook the chorizo over medium heat until browned and cooked through, about 5-7 minutes. Drain excess fat.

Make the Roux
Sprinkle the all-purpose flour over the cooked chorizo and stir to combine. Cook for an additional minute to eliminate the raw flour taste.

Add Liquid
Gradually whisk in the milk and chicken broth. Cook, stirring continuously, until the gravy thickens, about 3-5 minutes. Season with paprika, cayenne, salt, and black pepper to taste.
Assemble Burritos

Fill the Tortillas
Warm the flour tortillas in a dry skillet or microwave. On each tortilla, add a portion of the egg, bacon, and vegetable mixture, followed by a sprinkle of cheddar cheese.

Roll the Burritos
Fold the sides of the tortilla inward, then roll from the bottom up to enclose the filling. Repeat with the remaining tortillas.

Place the burritos on a serving plate and drizzle generously with the chorizo gravy. Serve hot.
