Prepare the Chicken
Preheat your oven to 375°F (190°C). Begin by placing the chicken breasts between two pieces of plastic wrap and pound them to about 1/2 inch thickness.

Set Up the Breading Station
In three separate shallow dishes, place the flour in the first dish, beat the eggs in the second, and put the breadcrumbs mixed with salt and pepper in the third.

Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture.

Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken and fry for 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
In a baking dish, place the fried chicken breasts. Spoon marinara sauce over each piece, then sprinkle mozzarella and Parmesan cheese on top.

Bake
Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven, and garnish with fresh basil leaves. Slice the submarine rolls and place a piece of chicken on each. Serve hot.
