Method
Chicken Preparation
- 1
Brine the Chicken
In a bowl, combine the chicken breasts with the pickle juice. Cover and refrigerate for at least 1 hour, or overnight for best results.
- 2
Prepare the Breading
In a shallow dish, mix the flour, salt, black pepper, garlic powder, and paprika. In another dish, beat the eggs and mix in the buttermilk.
- 3
Bread the Chicken
Remove the chicken from the brine and pat dry. Dip each piece into the buttermilk mixture, then into the flour mixture, ensuring they are well-coated.
- 4
Fry the Chicken
In a deep skillet, heat the oil over medium-high heat. Once hot, carefully add the breaded chicken strips. Fry until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.
Waffle Preparation
- 5
Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- 6
Combine Wet Ingredients
In another bowl, beat the eggs, then add in the buttermilk, melted butter, and vanilla extract. Mix until well combined.
- 7
Combine Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.
- 8
Cook the Waffles
Preheat a waffle iron according to the manufacturer's instructions. Pour the appropriate amount of batter onto the iron and cook until golden and crisp, about 5 minutes.
Serving
- 9
Plate the Dish
Serve the fried chicken strips over the freshly made waffles. Drizzle with 100% pure Vermont maple syrup to taste.
