For the Cheese Curds

    Prepare the Cheese Curds

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well until evenly combined.

    Make the Batter

    Gradually add the cold water to the dry mixture, whisking until you achieve a smooth batter consistency.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Cheese Curds

    Dip the cheese curds into the batter, ensuring they are well-coated. Carefully drop them into the hot oil in batches, frying until they are golden brown, about 2-3 minutes per batch.

    Drain and Serve

    Remove the fried cheese curds from the oil and drain on paper towels. Serve hot with your choice of ranch or sriracha aioli.

For the Ranch Dipping Sauce

    Mix the Ingredients

    In a bowl, combine mayonnaise, sour cream, buttermilk, dried dill weed, garlic powder, onion powder, salt, and black pepper. Stir until well blended.

    Chill the Sauce

    Cover the mixture and refrigerate for at least 30 minutes before serving to let the flavors meld.

For the Sriracha Aioli

    Combine Ingredients

    In a bowl, whisk together mayonnaise, sriracha sauce, lemon juice, garlic powder, and salt until smooth.

    Adjust to Taste

    Taste the aioli and adjust the salt as needed. Refrigerate until ready to serve.
