Method
Cheese Curds Preparation

Prepare the Breading Mixture
In a medium bowl, whisk together the flour, cornmeal, paprika, garlic powder, onion powder, salt, and black pepper until well combined.

Prepare the Wet Mixture
In another bowl, whisk together the buttermilk and egg until smooth and well combined.

Coat the Cheese Curds
Dip each cheese curd first into the wet mixture, allowing excess to drip off, then into the dry breading mixture. Make sure they are evenly coated.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Fry the Cheese Curds
Fry the breaded cheese curds in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on a paper towel.

Combine Ingredients
In a small bowl, mix together the mayonnaise, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper until smooth.

Adjust Seasoning
Taste and adjust seasoning with salt and pepper as desired. Refrigerate until ready to serve.
Zesty Sriracha Aioli Preparation

Mix the Aioli
In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, garlic powder, and salt. Stir until well combined.

Taste and Adjust
Taste the aioli and adjust the spiciness by adding more sriracha if desired. Refrigerate until ready to serve.
