Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cook the Steak

Add the steaks to the hot skillet. Cook for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Remove the steaks and let them rest for 5 minutes before slicing.

Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips. Rinse the fries in cold water to remove excess starch and pat them dry with a towel.

Heat the Oil

In a large, deep saucepan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes

Carefully add the potato strips to the hot oil in batches, frying for about 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt.

Garlic Butter

Make the Garlic Butter

In a small saucepan, melt the unsalted butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in the chopped parsley and lemon juice.
