Preparing the Filling

1. Prepare the Vegetables

Wash and prepare all vegetables. Julienne the carrot and cucumber, thinly slice the bell pepper, and shred the cabbage. Chop the mint and cilantro leaves.

Assembling the Spring Rolls

2. Soak Rice Paper Wrappers

Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it softens. Remove and lay it flat on a clean surface.

3. Fill the Wrapper

Place a small amount of the filling mixture (carrot, cucumber, bell pepper, cabbage, mint, and cilantro) on the lower third of the wrapper. Be careful not to overfill.

4. Roll the Wrapper

Fold the sides of the rice paper wrapper over the filling, then roll it up tightly from the bottom to the top, ensuring the filling is secured inside. Repeat with the remaining wrappers and filling.

5. Mix the Dipping Sauce

In a small bowl, whisk together the soy sauce, peanut butter, honey, rice vinegar, sesame oil, and water until well combined. Adjust the consistency with more water if needed.

Arrange the spring rolls on a platter and serve with the prepared dipping sauce on the side.
