Method
Preparation
Making the Chocolate Lava Cake
Melt Butter and Chocolate
In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Whisk Eggs and Sugar
In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly frothy.
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, whisking continuously until fully incorporated.
Add Dry Ingredients
Sift in the flour and add the vanilla extract and a pinch of salt. Gently fold the mixture together until just combined.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
Serving
Cool and Serve
Remove the cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream.
