Method
Cooking the Pasta
Boil the Pasta
In a large pot of salted boiling water, add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
Drain the Pasta
Once cooked, reserve about 1 cup of pasta water, then drain the pasta and set aside.
Preparing the Chicken
Season the Chicken
Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from skillet and let rest before slicing.
Making the Alfredo Sauce
Melt the Butter
In the same skillet used for the chicken, add the unsalted butter and let it melt over medium heat.
Stir in Heavy Cream
Slowly pour in the heavy cream, stirring constantly. Bring the mixture to a gentle simmer.
Add Cheese and Seasoning
Gradually whisk in the grated Parmesan cheese, salt, black pepper, and grated nutmeg until the sauce is creamy and smooth.
Combining Ingredients
Mix Pasta and Sauce
Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
Slice Chicken
Slice the cooked chicken breasts into strips and place on top of the pasta.
Garnish and Serve
Sprinkle chopped parsley and extra Parmesan cheese on top before serving.
