Preparation

Bloom the Gelatin

In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it sit for about 5 minutes until it becomes gel-like.

Heat the Cream

In a saucepan, combine the heavy cream, sugar, vanilla extract, and a pinch of salt. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture is hot but not boiling.

Combine Gelatin and Cream

Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.

Mix in Yogurt

Allow the mixture to cool slightly, then whisk in the yogurt until smooth and combined.

Pour and Chill

Divide the mixture into serving glasses or molds. Refrigerate for at least 4 hours, or until set.
