Preparation

Prepare the Asparagus

Trim the tough ends off the asparagus and rinse under cold water. Pat dry with a paper towel.

Season the Fish

Season the Arctic char fillets with salt, black pepper, and lemon juice on both sides.

Cooking

Pan-Seer the Arctic Char

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the Arctic char fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until cooked through. Remove from skillet and keep warm.

Sauté the Asparagus

In the same skillet, add the remaining olive oil and the asparagus. Sauté for about 3-4 minutes until they are tender-crisp. Season with salt and pepper.

Add Crab and Basil

Add the crab meat and basil to the skillet with the asparagus. Stir gently to combine and heat through for another 2 minutes.

Serving

Plate the Dish

Place the sautéed asparagus, crab, and basil mixture on a plate, and top with the pan-seared Arctic char. Drizzle with additional lemon juice if desired.
