Prepare the Zucchini

Slice the zucchini into thin rounds. Toss with olive oil, salt, and pepper. Set aside.

Prepare the Crab Mixture

In a bowl, combine the fresh crab meat, chopped basil leaves, lemon juice, salt, and pepper. Mix gently to combine.

Smoke the Arctic Char

Preheat your smoker to 225°F (107°C). Season the Arctic char fillets with salt and pepper. Place the fillets in the smoker and smoke for about 30-40 minutes, or until the fish is cooked through and flakes easily.

Sauté the Zucchini

In a skillet over medium heat, add a little olive oil. Once hot, add the zucchini slices and sauté for about 5-7 minutes until they are tender and slightly golden.

Plate the Dish

On a plate, place a bed of sautéed zucchini, top it with the smoked Arctic char, and finally add the crab mixture on top. Garnish with additional basil if desired.
