Prepare the Lentils

Rinse the lentils under cold water. In a medium pot, combine the lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.

Toast the Pine Nuts

In a dry skillet over medium heat, toast the pine nuts for 3-5 minutes until golden brown, stirring frequently. Remove from heat and let cool.

Blanch the Pole Beans

Bring a pot of salted water to a boil. Add the pole beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking process. Drain again and set aside.

Combine Ingredients

In a large bowl, combine the cooked lentils, pole beans, toasted pine nuts, chopped dried apricots, and fresh parsley.

Dress the Salad

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.

Serve

Taste and adjust seasoning if necessary. Serve the pole beans salad at room temperature or chilled.
