Prepare the Mochi

In a microwave-safe bowl, mix sweet rice flour, sugar, and water until smooth. Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, stir, then microwave for another 1-2 minutes until the mixture is translucent and sticky.

Shape the Mochi

Dust a clean surface with cornstarch. Transfer the mochi mixture onto the surface and let it cool slightly. Dust your hands with cornstarch, then pinch off pieces of mochi and shape them into small balls or discs. Roll each piece in chopped pistachios to coat.

Prepare the Strawberries

In a small bowl, combine the sliced strawberries with a splash of Prosecco. Let them macerate for about 10 minutes to enhance the flavor.

Serve

Arrange the pistachio mochi on a serving platter. Top with the macerated strawberries and drizzle with additional Prosecco. Enjoy immediately.
