Prepare the Lamb

Season the lamb chops with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the lamb chops and sear for about 4-5 minutes on each side, or until they reach your desired doneness. Remove from the skillet and let them rest.

Cook the Romano Beans

In the same skillet, add the remaining tablespoon of olive oil. Sauté minced garlic for about 1 minute until fragrant. Add the Romano beans and cook for about 5 minutes, stirring occasionally.

Sauté the Kale

Add the kale to the skillet with the Romano beans. Drizzle with lemon juice and cook for another 3-4 minutes until the kale is wilted and tender.

Toast the Pine Nuts

In a separate small pan, toast the pine nuts over medium heat for about 3-4 minutes until golden brown. Make sure to stir frequently to prevent burning.

Serve

Plate the lamb chops alongside the sautéed Romano beans and kale. Top with toasted pine nuts and serve immediately.
