Pretzel Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine flour and salt. Add the melted butter and the activated yeast mixture. Stir until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour.

Shape Pretzels
Preheat the oven to 450°F (232°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

Baking Soda Bath
Bring a large pot of water to a boil and add 1/2 cup of baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Bake
Sprinkle the pretzels with coarse salt. Bake in the preheated oven for 12-15 minutes or until golden brown.

Cool and Serve
Remove from the oven and allow to cool slightly before serving. Enjoy with mustard or cheese dip.
