Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin fries and soak them in cold water for about 30 minutes to remove excess starch.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Drain the soaked potatoes and pat them dry. Carefully add a batch of fries to the hot oil and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Prepare the Garlic

While the fries are frying, mince the garlic cloves. In a small pan, sauté the minced garlic in a tablespoon of oil over low heat until fragrant, being careful not to burn it.

Combine and Season

In a large bowl, toss the hot fries with the sautéed garlic, fresh parsley, salt, and black pepper. Serve immediately.
