Marinate the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, and paprika. Add the chicken thighs to the mixture and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Coating

In another bowl, mix together the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken

Remove the marinated chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Chicken

Carefully place the coated chicken into the hot oil, making sure not to overcrowd the pan. Fry for about 6-8 minutes on each side until golden brown and cooked through. An internal temperature of 165°F (74°C) is recommended.

Drain and Assemble

Once cooked, transfer the chicken to a wire rack or paper towel-lined plate to drain excess oil. Toast the burger buns lightly, then spread mayonnaise on the bottom half. Add a piece of fried chicken, followed by lettuce, tomato slices, and pickles. Top with the other half of the bun.
