Instructions

  1. 1

    Prepare the Artichokes

Trim the stems of each artichoke and remove the tough outer leaves. Cut the artichokes in half lengthwise and use a spoon to scoop out the fuzzy choke in the center.

  2. 2

    Boil the Artichokes

In a large pot, bring salted water to a boil. Add the artichoke halves and cook for about 15-20 minutes until tender. Drain and let cool.

  3. 3

    Prepare the Marinade

In a bowl, mix together olive oil, lemon juice, minced garlic, salt, black pepper, and red pepper flakes. Adjust seasoning to taste.

  4. 4

    Marinate the Artichokes

Brush the cooled artichoke halves with the marinade, ensuring they are well coated. Let them sit for at least 30 minutes to absorb the flavors.

  5. 5

    Grill the Artichokes

Preheat your grill to medium-high heat. Place the marinated artichokes cut-side down on the grill. Cook for about 5-7 minutes until they are nicely charred. Flip and grill for an additional 5 minutes.

  6. 6

    Serve

Remove from the grill and sprinkle with fresh parsley. Serve hot with a drizzle of extra olive oil if desired.
