    Prepare the Ingredients

    Slice the onion, mushrooms, bell pepper, and jalapeno. Set aside.

    Cook the Steak

    Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Season the ribeye steak with salt and black pepper. Grill the steak for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes.

    Sauté the Vegetables

    In the same pan, add the remaining tablespoon of olive oil. Add the sliced onion, mushrooms, bell pepper, and jalapeno. Sauté for about 5-7 minutes until they are tender and slightly caramelized.

    Slice the Steak

    Thinly slice the grilled steak against the grain.

    Assemble the Sandwich

    Place the sliced steak on the hoagie rolls, top with the sautéed vegetables, and add Swiss cheese slices on top. Place the assembled sandwiches under a broiler for about 2 minutes or until the cheese melts.

    Remove from the oven, let cool slightly, and serve hot.
