Fried Catfish

    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes.

    Mix Dry Ingredients

    In a bowl, combine cornmeal, flour, cayenne pepper, salt, and black pepper.

    Coat the Catfish

    Remove catfish from buttermilk, letting excess drip off. Dredge in the cornmeal mixture until well coated.

    Fry the Catfish

    In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish for 4-5 minutes per side until golden brown. Drain on paper towels.

Potato Salad

    Boil the Potatoes

    In a large pot, boil potatoes until tender. Drain and let cool, then peel and dice.

    Combine Ingredients

    In a bowl, mix diced potatoes, mayonnaise, mustard, celery, red onion, and season with salt, pepper, and paprika.

    Chill

    Refrigerate for at least 30 minutes before serving.

Sweet Peas

    Prepare the Peas

    In a small saucepan, melt butter over medium heat. Add sweet peas and cook until heated through. Season with salt to taste.
