    Prepare the Ingredients

    Slice the onion, mushrooms, bell pepper, and jalapeno. Set aside.

    Marinate the Shrimp

    In a bowl, toss the shrimp with olive oil, salt, and black pepper. Let it marinate for about 15 minutes.

    Grill the Vegetables

    In a skillet over medium heat, add a tablespoon of olive oil. Add the sliced onion, mushrooms, bell pepper, and jalapeno. Sauté until the vegetables are soft and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add the marinated shrimp and cook for about 3-4 minutes, or until they turn pink and opaque.

    Combine Everything

    Return the sautéed vegetables to the skillet with the shrimp. Mix well to combine and cook for an additional minute.

    Melt the Cheese

    Sprinkle the shredded Swiss cheese over the shrimp and vegetable mixture. Cover the skillet to allow the cheese to melt, about 2-3 minutes.

    Scoop the cheesy shrimp and vegetable mixture into the submarine rolls or hoagie buns. Serve immediately.
