    Prepare the Shrimp

    In a large bowl, soak the peeled and deveined shrimp in buttermilk for at least 30 minutes.

    Mix Dry Ingredients

    In a separate bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper.

    Coat the Shrimp

    Remove the shrimp from the buttermilk and let excess drip off. Dredge the shrimp in the flour mixture until fully coated.

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Assemble the Po-Boys

    Slice the French bread or hoagie rolls in half. Spread mayo on each side, then layer with fried shrimp, shredded lettuce, sliced tomatoes, and pickles.

    Cut the Po-Boys in half and serve immediately.
