    Prepare the Catfish

    In a bowl, combine the cornmeal, all-purpose flour, and cajun seasoning. Dip each catfish fillet into the buttermilk, then dredge in the cornmeal mixture until thoroughly coated.

    Fry the Catfish

    Heat the vegetable oil in a large skillet over medium-high heat. Carefully add the coated catfish fillets and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

    Assemble the Po-Boy

    Slice the French bread lengthwise, leaving one side attached. Spread mayonnaise on both sides. Layer with lettuce, sliced tomatoes, pickles, and the fried catfish.

    Serve

    Cut the Po-Boy into smaller portions, if desired, and serve immediately.
