Method
Prepare the Chips

Bake or Fry Tortilla Chips
If using store-bought tortilla chips, skip this step. For homemade chips, cut corn tortillas into triangles, then deep fry in hot oil or bake in the oven at 180 degrees Celsius (350 degrees Fahrenheit) until golden and crispy.
Layer the Ingredients

Layer Chips and Cheese
On a large serving platter or oven-safe dish, spread half of the tortilla chips evenly. Sprinkle half of the Monterey Jack cheese and half of the cheddar cheese over the chips.

Add Toppings
Add half of the sour cream, pico de gallo, diced tomatoes, sliced jalapenos, chopped chives, and diced red onions on top of the cheese layer.

Repeat Layering
Repeat the layering process with the remaining tortilla chips, followed by the remaining cheeses and toppings.
Melt the Cheese

Melt in the Oven
Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit). Place the layered nachos in the oven and bake for about 10-15 minutes or until the cheese is melted and bubbling.
Add Protein (if desired)

Top with Protein
If using ranchero chicken or chili beef, sprinkle it evenly over the nachos before serving, allowing it to warm through in the oven.
Serve

Garnish and Serve
Remove the nachos from the oven and let them cool slightly. Serve hot with additional sour cream and toppings on the side.
