Filling Preparation

1. Prepare the Berries

In a large mixing bowl, combine the fresh mixed berries. If using strawberries, hull and slice them into smaller pieces.

2. Mix with Sugar and Flour

Add 1 cup of granulated sugar, 2 tablespoons of all-purpose flour, 1 tablespoon of lemon juice, and 1 teaspoon of ground cinnamon to the berries. Gently toss to combine, ensuring all the berries are coated.

3. Let the Filling Rest

Allow the berry mixture to sit for about 15 minutes, so the juices can start to release.

4. Combine Dry Ingredients

In a separate mixing bowl, whisk together 1 cup of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, and 1 teaspoon of salt until well combined.

5. Add Wet Ingredients

Pour in 1 cup of milk and the melted stick of unsalted butter into the dry ingredients. Stir until just combined; do not overmix.

6. Preheat the Oven

Preheat your oven to 375°F (190°C).
