    In a medium bowl, whisk together olive oil, soy sauce, honey, minced garlic, smoked paprika, black pepper, salt, and cayenne pepper until well combined.

    Marinate the Chicken

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Smoking

    Prepare the Smoker

    Soak the smoking wood chips in water for at least 30 minutes before you start smoking. This will help them smolder and produce smoke instead of burning up quickly.

    Prepare your smoker according to the manufacturer's instructions. Preheat it to 250°F (120°C). Add the soaked wood chips to the smoker box.
