Brisket Preparation

Prepare the Brisket
Trim any excess fat from the brisket, leaving about a quarter-inch of fat for moisture and flavor.

Season the Brisket
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub the spice mixture all over the brisket, ensuring it is well-coated. Let it sit at room temperature for 30 minutes.

Smoke the Brisket
Place the brisket in the smoker and add the soaked wood chips. Smoke the brisket for approximately 1 hour per pound, or until it reaches an internal temperature of 195°F (90°C). This usually takes about 4 to 6 hours.

Slice the Brisket
Using a sharp knife, slice the brisket against the grain into thin slices for serving.

Prepare Coleslaw
In a large bowl, mix together shredded cabbage, carrots, and coleslaw dressing. Toss until the vegetables are well coated. Refrigerate for at least 30 minutes before serving.

On each serving plate, place a generous portion of sliced smoked brisket, a serving of coleslaw, and a serving of BBQ baked beans. Add two slices of bread on the side.
