Preparation of Potatoes

    Boil the Potatoes

    Wash and peel the Yukon Gold potatoes, then cut them into quarters. Place the potatoes in a large pot, add enough water to cover them, and add 1 tsp of salt. Bring to a boil over high heat, then reduce to medium and cook for about 15-20 minutes or until tender.

    Smash the Potatoes

    Once the potatoes are tender, drain them and return them to the pot. Use a potato masher or fork to gently smash the potatoes until they are slightly broken but still chunky. Drizzle with 2 tbsp of olive oil, and sprinkle with 1 tsp black pepper. Mix gently to combine.

Preparation of Gravy

    Make the Roux

    In a medium saucepan over medium heat, melt 4 tbsp of butter. Once melted, whisk in 1/4 cup of all-purpose flour and cook for about 1-2 minutes until bubbly and golden, stirring continuously.

    Add Vegetable Broth

    Slowly pour in 2 cups of vegetable broth while whisking continuously to prevent lumps. Continue to whisk until the mixture is smooth and begins to thicken.

    Season the Gravy

    Add 2 tbsp of soy sauce, 1 tsp of garlic powder, and 1 tsp of onion powder to the gravy. Season with salt and black pepper to taste. Simmer for an additional 5 minutes, stirring occasionally.
