    Trim any excess fat from the pork shoulder and cut it into large chunks for easier cooking.

    Mix the Dry Rub

    In a bowl, combine brown sugar, paprika, salt, black pepper, cayenne pepper, garlic powder, onion powder, and ground cumin to create a dry rub.

    Apply the Dry Rub

    Rub the dry mixture all over the pork chunks, ensuring they are well-coated. Let them sit for at least 30 minutes or refrigerate overnight for deeper flavor.

Cooking

    Cook the Pork

    Place the coated pork shoulder in a slow cooker. Add liquid smoke for that smoky flavor.

    Add the Sauce Ingredients

    In a separate bowl, mix together the apple cider vinegar, ketchup, Worcestershire sauce, honey, and mustard. Pour this sauce over the pork in the slow cooker.
