Crust Preparation

    Combine Ingredients

    In a medium mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.

    Form the Crust

    Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan. Ensure the crust is even and compact.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes or until it is lightly golden. Remove from the oven and allow to cool completely.

Filling Preparation

    Mix the Filling

    In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and well combined.

    Pour into Crust

    Once the crust has cooled, pour the key lime filling into the prepared crust, smoothing the top with a spatula.

    Bake the Filling

    Bake the pie in the preheated oven at 350°F (175°C) for 10-15 minutes, or until the filling is set and slightly puffed. Remove from the oven and allow to cool at room temperature.

    Chill the Pie

    Once cooled, refrigerate the pie for at least 4 hours, or preferably overnight, to allow the flavors to meld and the filling to firm up.

Topping Preparation

    Whip the Cream

    In a mixing bowl, beat the heavy whipping cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.

    Add Lime Zest

    Gently fold in the lime zest into the whipped cream to distribute evenly.

    Top the Pie

    Once the pie is set and chilled, spread the whipped cream mixture over the top of the pie, covering it evenly.

    Slice the pie into wedges and serve chilled, garnished with additional lime zest if desired.
