Idaho Potato Skins Recipe

Fresh Idaho potatoes mixed with cheddar cheese, bacon bits and chives. Drizzled with sour cream and served with our made-in-house Ranch dressing.

Method

Preparing the Potato Skins

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Bake the Potatoes

    Wash the Idaho potatoes thoroughly and prick them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes or until they are tender when pierced with a fork.

    Cool and Cut

    Remove the potatoes from the oven and let them cool for a few minutes. Once cool enough to handle, cut each potato in half lengthwise.

    Scoop Out the Flesh

    Gently scoop out some of the potato flesh, leaving about 1/4 inch of potato on the skin. Set the scooped potato aside for another use.

    Add Toppings

    Sprinkle shredded cheddar cheese, bacon bits, and chopped chives into each potato skin.

    Bake Again

    Return the stuffed potato skins to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, drizzle with sour cream, and serve warm.

Making the Ranch Dressing

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper.

    Mix Well

    Stir all the ingredients together until well combined and smooth.

    Chill

    Refrigerate the ranch dressing for at least 30 minutes to allow the flavors to meld.
