Salad Preparation

Prepare the Vegetables
Rinse all vegetables under cold water. Pat them dry with a clean towel.

Chop the Greens
In a large salad bowl, add the mixed greens as the base of your salad.

Halve the Tomatoes
Cut the cherry tomatoes in half and add them to the bowl with the mixed greens.

Slice the Cucumber
Peel the cucumber if desired, then slice it into rounds or half-moons and add it to the salad.

Chop the Red Onion
Thinly slice the red onion and sprinkle it over the salad.

Shred the Carrots
Peel the carrots, then shred them using a grater or mandolin. Add them into the salad bowl.

Dice the Bell Pepper
Remove the seeds and core from the bell pepper, then dice it into small pieces and mix it into the salad.
Dressing Preparation

Combine Ingredients for Dressing
In a small bowl or jar, combine olive oil, balsamic vinegar, honey, Dijon mustard, and lemon juice.

Whisk or Shake
Whisk the dressing mixture until well combined or seal the jar and shake vigorously.

Taste the dressing and add salt and black pepper to your preference.

Pour the dressing over the salad and gently toss to combine all ingredients.
