Preparation

    Prepare the Brisket

    Take the brisket and trim any excess fat from the surface, leaving about a 1/4 inch layer to help keep the meat moist during cooking.

    Season the Brisket

    In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture evenly over the entire surface of the brisket.

    Wrap and Refrigerate

    Wrap the seasoned brisket tightly in plastic wrap or aluminum foil and refrigerate for at least 24 hours to let the flavors penetrate the meat.

Cooking

    Preheat the Oven

    Preheat your oven to 225°F (107°C). This low temperature will help slowly cook the brisket, ensuring tenderness.

    Prepare for Roasting

    Remove the brisket from the refrigerator and let it sit at room temperature for about 30 minutes. Heat olive oil in a large skillet over medium-high heat.

    Sear the Brisket

    Sear the brisket on all sides in the hot skillet until browned (about 3-4 minutes per side).

    Transfer to Oven

    Place the seared brisket in a roasting pan and cover it tightly with aluminum foil. Transfer it to the preheated oven.
