Chicken Marinade
Chopped BBQ Chicken Assembly
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a large mixing bowl, combine the BBQ sauce, olive oil, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- 2
Marinate the Chicken
Add the boneless, skinless chicken breasts to the marinade, making sure they are thoroughly coated. Cover the bowl with plastic wrap or transfer the chicken and marinade to a resealable plastic bag. Refrigerate for at least 24 hours to let the flavors meld.
Cooking and Assembling the Dish
- 3
Cook the Chicken
Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and let excess marinade drip off. Grill the chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for 5 minutes.
- 4
Chop the Chicken
Once the chicken has rested, chop it into bite-sized pieces.
- 5
Assemble the Dish
In a large serving bowl or platter, layer the chopped chicken, chopped green onions, chopped cilantro, shredded cheese, and sliced avocado. Serve with corn tortillas on the side for wrapping.
