Make the Cheese Sauce
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the milk, continuing to stir until the mixture thickens, about 3-5 minutes. Add the shredded cheddar cheese, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.

Layer the Nachos
On a large oven-safe platter or baking sheet, spread out the tortilla chips evenly. Spoon the BBQ pulled pork evenly over the chips, followed by drizzling the cheese sauce over the top.

Add Toppings
Sprinkle the sliced jalapeños over the nachos. Add dollops of sour cream on top.

Bake the Nachos
Preheat the oven to 350°F (175°C). Bake the nachos in the preheated oven for about 10 minutes, or until the cheese sauce is bubbly and the chips are slightly toasted.
