    Prepare the Jackfruit

    Drain and rinse the canned jackfruit under cold water. Remove any seeds and cut the jackfruit into smaller pieces.

    In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.

    Add the prepared jackfruit to the skillet. Sprinkle in smoked paprika, ground cumin, chili powder, salt, and black pepper. Stir well to combine.

    Pour in the soy sauce, maple syrup, and vegetable broth. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 20 minutes, stirring occasionally.
