Method

Prepare the Roasted Pork

    Season the Pork

    In a bowl, mix garlic powder, cumin, salt, and black pepper. Rub this seasoning all over the pork shoulder.

    Sear the Pork

    In a skillet, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 2-3 minutes per side.

    Roast the Pork

    Transfer the pork to a slow cooker. Cook on low for 6-8 hours or until the pork is tender and easily shredded.

Prepare the Black Beans

    Sauté the Aromatics

    In a saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent.

    Stir in the canned black beans, cumin, and salt. Cook for 5-7 minutes until heated through, mashing the beans slightly with a fork.

Make the Pork Green Chili Sauce

    In a saucepan over medium heat, add olive oil, diced onion, and minced garlic. Sauté until the onion is soft.

    Add pork broth, green chilies, cumin, and salt to the pan. Bring to a simmer and cook for about 15-20 minutes to let the flavors meld.

Prepare the Tortillas

    In a large skillet, heat vegetable oil over medium heat. Fry the corn tortillas one at a time until crispy, about 1-2 minutes per side. Drain on paper towels.

Cook the Eggs

    In a non-stick skillet, lightly grease with oil and crack the eggs in. Cook sunny side up until the whites are set but the yolks are still runny, about 3-4 minutes.

Assemble the Huevos Rancheros

    On each crispy tortilla, layer a spoonful of black beans, shredded roasted pork, and a sunny side up egg. Drizzle with pork green chili sauce.
