Preparing the Donut Holes

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground nutmeg until well combined.

Combine Wet Ingredients
In a separate bowl, whisk together the buttermilk, large egg, melted unsalted butter, and vanilla extract until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are fine.

Heat Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). You will need enough oil to submerge the donut holes.

Fry the Donut Holes
Using a small cookie scoop or your hands, carefully drop tablespoon-sized balls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pot. Fry until golden brown on all sides, about 3-4 minutes. Use a slotted spoon to remove the donut holes and place them on a paper towel-lined plate to drain excess oil.
