    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrots, and sauté until the vegetables are softened, about 5 minutes.

    Add Potatoes and Broth

    Stir in the diced potatoes and corn, then pour in the chicken or vegetable broth. Add the thyme, bay leaf, salt, and black pepper. Bring to a boil.

    Simmer

    Reduce the heat to low and let the chowder simmer until the potatoes are tender, about 15-20 minutes.

    Add Cream

    Remove the bay leaf and stir in the heavy cream. Allow the chowder to heat through, but do not boil.

    Ladle the chowder into bowls and garnish with chopped fresh parsley before serving.
