Prepare the Wild Rice
Rinse the wild rice under cold water and drain. In a medium saucepan, combine the wild rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes or until the rice is tender and the liquid is absorbed.
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are soft. Stir in the minced garlic and thyme, and cook for an additional 1-2 minutes.
Serve
Serve warm as a side dish with grilled salmon or your choice of protein.
