Prepare the Crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust.

Bake the Crust

Bake the crust in the preheated oven for about 10 minutes, then remove and let it cool while you prepare the filling.

Make the Filling

In a large mixing bowl, combine the ricotta cheese, mascarpone cheese, sugar, and Strega liqueur. Mix until smooth. Add in the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.

Combine and Bake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Cool and Chill

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
