Mousse Preparation
Prepare the Gelatin
In a small bowl, sprinkle gelatin over cold water and let it sit for about 5 minutes to bloom.
Mix Mascarpone
In a large mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth.
Whip the Cream
In another bowl, whip the heavy cream until soft peaks form.
Combine Mixtures
Gently fold the whipped cream into the mascarpone mixture until well combined.
Melt Gelatin
Gently heat the bloomed gelatin in the microwave for about 10 seconds, then stir until fully dissolved.
Incorporate Gelatin
Fold the dissolved gelatin into the mascarpone mousse mixture until evenly mixed.
Assembly
Prepare Espresso
Brew the espresso coffee and let it cool slightly.
Assemble the Dessert
Dip each ladyfinger into the espresso briefly, then layer them in serving glasses. Top with a layer of mascarpone mousse.
Repeat Layers
Repeat the process until the glasses are filled, finishing with a layer of mascarpone mousse.
Chill
Refrigerate the assembled desserts for at least 4 hours or overnight to set.
Garnish and Serve
Before serving, top with chocolate shavings for garnish.
