Prepare the Tomatoes
Wash the tomatoes, remove the stems, and chop them into bite-sized pieces.

Cook the Bacon
In a skillet over medium heat, cook the Italian bacon until crispy. Remove from heat and let it cool slightly, then chop into small pieces.

Prepare Arugula
Rinse the arugula in cold water and dry with a salad spinner or paper towels.

Grate the Cheese
Grate the Parmigiano Reggiano using a fine grater.

Combine Ingredients
In a large bowl, combine the chopped tomatoes, crispy bacon, and arugula.

Dress the Salad
Drizzle with olive oil, and season with salt and black pepper to taste. Toss gently to combine.

Plate the salad and sprinkle grated Parmigiano Reggiano on top before serving.
