Prepare the Ingredients
Finely chop the pistachios and grate the Parmigiano Reggiano. Slice the mortadella into thin pieces.

Mix the Mascarpone
In a mixing bowl, combine the mascarpone cheese with half of the chopped pistachios and a pinch of salt. Mix until smooth and well combined.

Assemble the Dish
On a serving platter, layer the slices of mortadella. Spread a generous amount of the mascarpone mixture on top of each slice.

Garnish
Sprinkle the remaining chopped pistachios and grated Parmigiano Reggiano over the top of the assembled mortadella.

Serve immediately as an appetizer or a light main dish.
