Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Shrimp
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the fresh shrimp, cooking until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

Sauté Aromatics
In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and chopped green onions. Sauté for 2-3 minutes until fragrant.

Add Champagne
Pour in the champagne and bring to a simmer. Let it reduce by half, about 5 minutes.

Finish the Sauce
Reduce the heat to low and stir in the heavy cream, salt, and black pepper. Cook for an additional 2-3 minutes until heated through.

Plate the Dish
Serve the shrimp and sauce over the cooked pasta. Garnish with additional parsley if desired.
