Preparing the Filling
Cook the Spinach
In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool.
Cook the Ground Beef
In the same pan, add ground beef, salt, and black pepper. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat.
Combine Filling Ingredients
In a large bowl, combine cooked beef, wilted spinach, ricotta cheese, shredded mozzarella, and grated Parmesan. Mix until well combined.
Making the Sauce
Add Tomatoes and Seasoning
Stir in canned crushed tomatoes, Italian seasoning, salt, and black pepper. Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally.
Assembling the Cannelloni
Preheat the Oven
Preheat your oven to 180°C (350°F).
Fill the Cannelloni
Using a piping bag or a spoon, carefully fill each cannelloni tube with the meat and cheese filling.
Layer the Sauce
Spread a thin layer of the prepared tomato sauce on the bottom of a baking dish. Arrange the filled cannelloni on top of the sauce, and then cover with the remaining sauce.
Bake
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden.
