Pasta Preparation

    Cook Cannelloni Tubes

    Bring a large pot of salted water to a boil. Add cannelloni tubes and cook for 7-8 minutes until slightly al dente. Drain and rinse under cold water to stop cooking. Drizzle with olive oil to prevent sticking.

Filling Preparation

    Prepare Filling

    In a large bowl, combine crabmeat, chopped shrimp, ricotta cheese, grated Parmesan, parsley, minced garlic, black pepper, and lemon zest. Mix gently until well combined.

Sauce Preparation

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute. Stir in crushed tomatoes, oregano, salt, black pepper, basil, and sugar. Simmer for 15-20 minutes, stirring occasionally.

Assembly and Baking

    Assemble Cannelloni

    Preheat the oven to 180°C (350°F). Fill each cannelloni tube with the seafood filling using a piping bag or a spoon. Spread a thin layer of sauce on the bottom of a baking dish. Arrange the filled cannelloni in the dish and cover with remaining sauce.

    Add Topping

    Sprinkle the remaining grated Parmesan cheese and chopped parsley over the top.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the top is golden and bubbly.
